This was a problem with Vampire Chronicles, Street Fighter Alpha 3, and Marvel vs. Games Database - Online Games System Repository. They don't suffer from the shimmery, pixelated look that plagued most of the Capcom releases on Dreamcast.
In fact, I think they are the best ports of a 2d fighting game on the Dreamcast. There isn't even a hint of loading (unlike 3rd Strike which noticeably loads between fights in each console iteration). The Street Fighter 30th Anniversary Collection is, in my opinion, a fantastic time-capsule for those new to Street Fighter or old souls who want to relive the past. IIRC think there might have been some glitches/infinites removed from the arcade version, but this is pretty trivial. Visually they are perfect to the arcade versions.
